Is anybody else as excited about the early strawberry season as I am? Can you believe that strawberries are already in season? I'm not complaining about this one though. I was really, really hoping to get the chance to eat a LOT of Ontario strawberries before our move and I guess I got my wish! Yay!! Even better is if the strawberry season in Nova Scotia is normal and when I get there I am able to enjoy a 2nd season of these yummy berries.
At the market I picked up two quarts of strawberries and we ended up snacking on them throughout the day. By dinner we weren't tired of them yet (who would really?) so I made sure to include them. Dinner was teriyaki chicken with a strawberry salad on the side.
The salad included green leaf lettuce, strawberries, toasted pecans and goat cheese. It was topped with a strawberry dressing. It was quite lovely.
Strawberry Salad Dressing
- 6 strawberries
- juice of 1/2 a lemon
- 1 tbsp honey
- 1 tbsp olive oil
To drink I made a homemade lemonade by squeezing the juice of the other 1/2 lemon into a glass, drizzled some honey on top and filled the glass with water and ice. Refreshing!
